If we have a fight ever or arguments, that has to be always over food. Miss Picky Pie, the pickiest eater of the world (I am not exaggerating) sometimes makes my life hell where she leaves me shattered, tattered (again not exaggerating) without any choices or on a bed of junk food to offer. I spend sleep nights, pinning hundreds of recipes on Pinterest when her school is open. Preparing her lunchbox is literally a nightmare to me. Mainly because she leaves for her school at 7.00 am and I have to prepare her lunch box ready by 6.30am. She will not have bread, no Parathas, no noodles, no eggs, no vegetables. She will have only Pasta or Something made out of Potato. So either I make pasta or potato wedges or chilli potato with a side of stir fried sweet corns that she really loves. But again if her friends refuse to share her tiffin because every day they are having the same dish and now want something new, Miss Picky Pie on same note comes back home and demands something new. Friends are the God to her. A word showered from their mouth that means those have to be written with a golden ink and propelled at any cost. And me, the mommy with a nettled heart, thrust my face again in the recipe collections.

One day I decided to make her a stuffed pizza. I made it one evening just to experiment how much she will like it and if it works well. I felt like Mumble and started to tap my feet without any music when she showed a thumbs up after tasting it. Bingo, I get another dish to update her choice list that can be sent in her lunch box. It is not possible for me to wake up at 3.00 am. to prepare the pizza dough. So what I do, I prepare the dough at night and keep it inside the Microwave. So that in the morning I only have to make the stuffing and the dough is perfectly ready for rolling and baking. The recipe is very easy and handy. And the kids surely going to love it, as I have to send few extra Pizza Pouches (Miss Picky Pie calls it by this name)for her friends on demand. So enjoy the recipe below:

Instructions
Make the Pizza Dough
  1. Take a bowl, Pour the Flour. Add the yeast, Sugar and salt. Mix well.
  2. Now Slowly add the warm water and keep on needing. Dont add all the water at time. Keep on adding as per rquirement. Make a soft dough and keep on kneading for at least 6-8 minutes unless the dough turns smooth, soft and your hand is not sticking to it. Add the olive oil and then again knoead for another 5 minutes. Cover it with a plastic wrap/ cling film or a wet colth for an hour to let it rise. (Please check Notes)
  3. Leave the dough for at least one hour to rise. Then knead again and prepare for the stuffing as instructed below. Pleas note: I prepare the dough at night and keep it inside the Microwave. So that in the morning I only have to make the stuffing and the dough is perfectly ready for rolling and baking.
Make the stuffing
  1. Chop the mushrooms in small pieces. Chop the garlic.
  2. Boil the sweet corn with a pinch salt for 5 minutes. Strain the excess water.
  3. Take a Pan. heat the oil. Add the chopped garlic. Give a good stir on high flame for a minute. Add the corns and the mushrooms. cook for a couple of minute. Then add the Salt, pepper and sugar. Mix nicely and take off the gas immediately.
Make the pouches
  1. Now take the Pizza dough. Knead it again for few minutes. Devide the dough in to 6 to 7 ping pong size balls.
  2. Roll a ball in a round shape. Use flour if you fill it is sticky. Don't roll too thin. Otherwise the stuffings will popped out.
  3. Pre heat the oven at 200 degree C for 5 minutes.
  4. Now take tomato sauce in spoon and spread in the center of the flat douch. top the center with a bit of the mushroom stuffing then top with cheese. Make sure that the stuffung should stay in the center. Now gently fold it in a half. Join the sides by pressing it. Then take a fork and press gently the side. Don't prick.
  5. Brush the pouches with butter or milk or with an egg. Bake for 20 to 30 minutes untill the pouches turns light brown.
  6. Enjoy with sauce or any dips.
Recipe Notes
  • I prepare the dough at night and keep it inside the Microwave. So that in the morning I only have to make the stuffing and the dough is perfectly ready for rolling and baking.
  • You can add chicken, fish to the stuffing to make it tastier. Or any kind of stuffing will work great with it.
