Our life is pretty fancied with all the updated modern amenities. Most of the time we hardly bother if that stuff is really needed but we get glued with the reviews, attractive features and the greed to own that. Life was simpler in a way in the pre-Covid19 era, we sought contentment in collecting expensive/inexpensive gadgets whether we use it or not. I bought a Rice cooker in a whim and it laid around for more than 3 years untouched unattended. Then one day suddenly the Covid19 broke down devastating each corner of the world creating a pandemic situation. The maids got paid off. The gas supply decreased. The household workload shot up all of a sudden and I thanked myself and the family to me for making the house a habitat for the kitchen gadgets (my sweet little soul was condemned each day for wasting money! Okay! No more exaggeration). The Rice Cooker and all the hidden gems suddenly turned into a superheroes who saved these burdened soul showering some relief. I started to cook cake, dhokla, chicken dishes, Idly, Veg/Prawn/ Chicken Biryanis, Chicken rice and et al in the rice cooker. Mr. Pie’s face illuminated each time I used the Rice Cooker. At last his money smiled him back.

Instructions
  1. Wash the rice and soak in water.
  2. Marinate the Chicken with everything mentioned in the ingredient section (except - nutmeg powder, whole spices, tej patta/ bay leaves, coriander leaves, oil, ghee and water). Before adding the potato make a slit length wise. (You can keep in fridge overnight or just for few minutes. Make sure if keep for over night don't add the potato).
  3. Heat Oil. Add Tej Patta and the whole spices. When it will start to splutter add the marinated chicken and the potato. Cook on high flame for 8- 10 minutes. Then cover the lid. on medium flame cook for few more minutes unless the potatos are near to half done. If one is not adding potato then keep on cooking on high flame for continuous 15 minutes, stirring in between.
  4. Take the rice cooker pan. Add the rice. Pour the water and the half cooked chicken. Give a stir. Taste and adjust the salt as per your taste. Cover the lid and Put the rice cooker on cook mode.
  5. Now after 10 mintues open the lid of the cooker and give a stir. Keep on checking unless the water is almost to dry up. Add the coriander leaves. Give a stir. Close the lid and cook for couple of minutes more. Then open the lid again add the melted ghee and sprinkle the nut meg powder on the top and put the cooker on warm mode. Please don't wait for the auto switch off mode. If you do so most of the time it burns the botton. Therefore always manully turn off the cook button and put it on warm mode. Ideally advised to keep it on warm mode for more than 1/2 hour to get the dish cooked perfectly.
Recipe Notes
  1. I always crispy fry finely sliced onions ad store it in the freezer. It not only makes my job easy, it saves time too.
  2. If you take 1 cup of rice then double up the water. So 2 cups water for 1 cup of rice. But when I make chicken rice I add a little extra water to get all the dish cooked nicely.
